Makeshift Monday

Happy Monday my fellow blog readers! I hope you all had a wonderful weekend and enjoyed the nice weather.

I’m just getting over my virus, but the cough has decided to stick around. Maxton is fighting a cough and cold (I feel horrible for passing it along to him) but has been in good spirits.

Today I thought I would share a delicious healthy recipe that is a “must-try” on the BBQ this summer:

Ultimate Turkey Burgers

1.5 lbs ground turkey
1 medium red pepper, diced into 1/4-inch pieces
2 garlic cloves, minced
1 tbsp finely minced parsley
1/2 tsp sea salt
1/2 tsp black pepper
1. In a medium bowl, combine all ingredients together well. Place about 1/3 cup of mixture between two sheets of waxed paper. Press firmly into a patty, about 4 inches wide and 1/2 inch thick. Repeat with remaining mixture until you have 6 patties. Chill in freezer for 30 minutes before grilling time. 
2. Using a spatula, place patties carefully on grill over medium-high heat. Grill 3 to 4 minutes, and then flip. Grill for another 3 to 4 minutes or until burgers are golden brown and firm in the middle.
These burgers freeze well so feel free to double the batch.
Take that extra healthy step and enjoy them on whole wheat buns! Enjoy!
